Vegan MoFo: Simple one-pot meal II, pasta with vegetables and black olive tapenade




I've been horrendously busy this week with college stuff, so the simple, unexciting, one-pot meal has become my go-to! I promise I'll make some cookbook recipes soon!
Today's version is pasta with veggies and a rough olive tapanade.
Put pasta and frozen veg in pot of boiling water to boil.
Then mix up with a fork or in a mini-chopper some olives, garlic, salt, olive oil and whatever other type of seasoning that you think might go well.
I put in some fresh basil. Roasted nuts and nutritional yeast would be good too.
Combine, eat.
Make enough for two meals and you've tomorrow's lunch sorted.
