Old El Paso's Crispy Chicken Fajita Kit was on special offer in my local supermarket for 59c. The kit includes tortillas, salsa and the crispy bread coating, which on reading of the ingredients seems vegan.
(I haven't contacted the company to ask, if anyone has let me know).
I took the 'go veggie' suggestion on the box and used aubergine slices instead of chicken. With some fried mushrooms, salad leaves and salsa it made a yummy, cheap dinner!
This looks delicious! I'll have to give it a go. Did you use the crispy bread to coat the aubergine?
