'Vegan cooking for one', to be honest, has never really inspired me. I accept that some books appeal to my tastes and style of cooking and some don't. However, I promised myself that for MoFo I would at least have a look through all my cookbooks and see if anything pops out.
Flicking through, the peanut sausages (p108) stood out, as I had the ungodly thought to replace the peanuts with my remaining Nuttolene.
So I crushed up the Nuttolene with the other ingredients, shaped into sausages and fried them up. Easy peasy. Nuttolene has found its way into my heart once again, as these sausages were really simple but tasty.

I threw together a full meal with a baked potato and some coleslaw made with Kelkin mayo. Unfortunately my camera malfunctioned so I don't have a picture.
