Vegan MoFo 2016 #5: Roasted vegetables with Ethica sausages

Tomato / brussel sprouts / broccoli / cauliflower / baby carrot / chorizo veggie sausage / traditional veggie sausage

I found these veggie sausages in Tesco, I don't know much about the Ethica brand but they are Irish. The sausages are soya-free, containing potato, barley, oats and pea protein. Being refrigerated rather than frozen I'd say you could probably eat them straight out of the package, but I've found if they are undercooked they are a bit starchy. However, they are hardy, and stand to a long cooking time. I put the chopped sausages in the oven with a tray of vegetables to roast for about an hour and a half and they didn't burn. They charred and were crunchy on the outside, but were still very edible. The two flavours I have tried are both nice, but I would say the chorizo is my favourite. Each packet contains four large sausages and they have a long best before date, which is always a bonus!

  1. Ooh they look tasty; I'm very fond of potato so I am completely behind the idea of potato sausages :D I'll definitely keep an eye out for these next time I do a Tesco shop.

    1. Thanks for your comment! Haha potato sausages make them sound very vegan 1.0, but they are really good! Dee's also do soya-free sausages but I wasn't mad on them, as much as I really wanted to be.
