On Monday I went a bit mad making alot of food, I've a few shorter days this week and don't need as much lunch so this evening I decided to make a leftover soup to use up some of the excess, which was just my spicy cooked vegetables (mixed veg from a stirfry mix I found in the bottom of the freezer, I'm trying to use up everything I have before buying more), cooked mixed beans and lentils boiled with stock. It was surprisingly good! I ate it with a couple of pieces of Swedish crispbread I bought in Ikea (it was my first time in Ireland's newest and only Ikea shop, I love the little Swedish food market and the fact that they give you free tea refills in the restaurant!)

Lunches For Long College Days and Ikea
This week is my first week back in college and I've been getting on quite well with my leftover-based lunches. I even bought a cute little pink lunchbag in Tesco for about €1.60 that holds all my little food containers, I love it, it reminds me of my first lunchbox I had for school when I was five! My little containers have been housing brown rice and beans, mashed potato with onions and kale (you wouldn't think it but it really works cold, especially with brown sauce.. mmm...), nuts, chopped fruit and I've been making salsa, humous and vegetable bagels. All makes for a pretty good lunch! It may sound like alot of food but its not unusual for me to spend ten hour days in college (more when I have fencing training). Small containers of good, filling food mean that I can eat little and often and survive the day! I'm sorry I don't have any photos, I rush out in the morning and I feel really silly taking food photos.
