Monday is my day off college, and therefore my cooking day! This week I decided to make some casseroles to put in the freezer and defrost before putting in my lunchbox. I made the 'Savoury Shepherd's Pie' from 'How It All Vegan' and the 'Chickpea
Broccoli Casserole' from 'Vegan With a Vengeance'.
I also made the 'Brooklyn Pad Thai' from
VWAV, I've never had pad
thai before but it was good! The sauce was lovely, but it was a little too sweet, even though I reduced the amount of sugar.
I also made some stewed apples and potato
salad, I know, a bit of a mixed bag!
My favourite breakfast: rice milk porridge with strawberries, blueberries, hemp seeds and agave syrup.
