I also got a giant head of kale for 99c, and I chopped it up and put it in to freeze alongside my squashes. I now have three bags of kale in my freezer, including the some I have left over from the last time I found kale. Its more widely available now and cheaper which must mean that its in season, although the last bags of kale I bought were grown in Ireland.. they must have been an early crop or something.

Squashes, Kale and Surplus Freezing
My apologies for my absence, I've been quite busy with college and therefore not really having much time to cook, besides scraping quick things together to bring for lunch. I went food shopping on Thursday night for the first time in ages, I absolutely love grocery shopping! It always annoys me when people push past me in the supermarket in such a hurry, I like to take my time, read ingredients, scan the shelves for new things that I haven't seen before, I love food and have been known to get unduly excited over it! Such as I was when I saw that they had loads of little autumn squashes, obviously in season. I bought a tiny little butternut squash and something which I think may be an acorn squash, I'm not sure. I took a photo of it in case anyone wants to correct me!
I haven't tried the new squash yet, I've had butternut squash before. I spent some time this afternoon peeling and chopping them to put in the freezer. I was surprised that the butternut squash had no seeds in in like they normally do. Is it because it was so small or was it just some sort of unic squash? The acorn squash however had lots of seeds and flesh to be scooped out with a little spoon. 'Vegan With A Vengeance' has a very useful page on how to cut up butternut squashes, which also came in useful for the newbie squash.
Once they're chopped up it's very hard to tell them apart...
It wasn't to me, so I put them in separate bags and labeled them.
Also in the shopping I bought a packet of frozen fruit, I tend to add packets to my giant frozen fruit freezer bag, its easier to have everything together and it doesn't take up as much space in the freezer.
