Today I just had a craving for lasagna so that's what I made!
I hadn't made it in ages but since I had some time to make dinner I figured why not give it a go! It was really simple but soooo good! The 'meat' sauce was jarred tomato sauce with frozen vegetables (courgette, broccoli, butternut squash, kale and aubergine) and frozen beans, and I made a simple white sauce with flour, Pure soya butter, rice milk and black pepper (an adaptation of the recipe suggested on the back on the pasta packet). I did the layering thing, the most fun part of it if you ask me, put some dairy free Parma on top and bam, chucked it in the oven for 20 mins. Good stuff! Even my mam had some, which is miraculous because my family definitely don't lust after what I cook! I'm not sure why but there's just something about baking a meal in the oven that makes it feel more like dinner, maybe its the fact that you put extra work into it.
