I don't do scant salads- salads need protein and alot of it! This is one of my massive salads, containing chickpeas, mushrooms, steamed tempeh, left over brown rice, chopped shallot, saurkraut and nutritious salad greens (spinach, rocket, lamb's lettuce, red chard). The dressing was a mixture of soya sauce, apple cider vinegar and dijon mustard. Yum yum ^_^
