Pancake Tuesday has many guises, Mardi Gras, Shrove Tuesday, that day before the day with the ashes but to us Irish it's a day to celebrate the joy of pancakes. Whether you prefer the more traditional crepe or the more American-style drop scone, it's all good!
I'm personally in the latter camp, I never cared for pancakes until I discovered the crepe's smaller, fluffier cousin.
In Ireland they're no problem to make as self-rasing flour is the most common variety of flour available, allowing one to make baking rise without giving it a second thought.
Here in Spain, however, I actually had to buy baking powder and flour seperately. Traumatic, I know, but I'm sure that some delicious pancakes will help me get over it!
One of the most popular pancake topping in Ireland is lemon juice and sugar, but I've never been one to let tradition hold me down! I like some buttery spread and jam, or if I'm feeling extravagant peanut butter and jam, some chocolate spread or maybe just a swirl of liquid sweetener like agave syrup... the delicious possibilities are endless!
Today I honoured the occasion with some delicious chocolate-chip pancakes, loosely based on this recipe . I added apple purée instead of banana and left out the vanilla as I didn't have any.
Nom nom Catalan.. no wait.. nom nom pancakes!
