Avocado soup, potato waffle breakfast and pb&j digestives

Over the last few days I've been fairly busy studying for exams and making food of various sorts, nothing too fancy, trying to use up what I have.
This evening I made the Sopa Lorca from 'Alternative Vegan' (p46).
I'd never made it before but I had all the ingredients on hand and who doesn't love potatoes, onion, garlic and avocados?
I think I didn't made enough of the roux, I was trying to reduce the recipe and probably didn't do it proportionately, so it was a little bit thin.
Its a nice soup, comfortably bland, I'd say it'd be good for if you had what Dino describes as a 'dancing stomach'.
The avocado is a nice touch. I absolutely love avocados, they're just so creamy and delicious, sometimes I just eat slices of it on their own. I get really excited when I see avocados int he supermarket, especially Haas. I currently have two avocados ripening in my fruit bowl, every once in a while I give them a squeeze just to check.

  Potato waffles, beans and tofu scramble is just amazing, its one of those meal that can be a weekend fry style breakfast, a good lunch, an easy dinner or a moreish supper.* Also works with toast or a wrap.
I've seen loads of recipes for tofu scramble which have all sorts of mad things in them but all you really need is some turmeric and soya sauce and you're set. Better still, fry some onions alongside and they turn yellow too!
Turmeric is awful for staining things, it never quite gets out of my little frying pan, I had to throw away my last one because anytime I went to make pancakes they turned out yellow!

Yes, that is peanut butter and jam on a digestive biscuit.

* On an unrelated note, my favourite use of the word 'moreish' is in Peep Show...
