Its great when you're hungry and want something mad quick.
These little beauties are wholemeal pitta breads with a layer of pesto, a layer of tomato sauce and the following vegetables: pumpkin, roasted red pepper, jalapenos, purple cauliflower, kale and avocado.
Amazing!
Especially with a cup of tea and Sunday Times Style magazine after a nice cycle!
I cycled down the beach this afternoon.The tide was in, it was sunny, all I could hear was the sound of the waves and the wind in the sand as I cycled through.
Very relaxing and meditative.
Wish I'd brought gloves though, it was not warm!
