Lower-calorie blueberry muffins and a note about "lower-calorie"

I made these blueberry muffins because I wanted a muffin with fewer calories and less fat that my usual recipe, but they are delicious in their own right. They are made with stewed apple instead of oil, but that doesn't make them any less valid. All non-holographic food is real and doesn't have any moral value, so I refuse to think of any food as "fake/real" or "bad/good". Another word I hate is eating "clean", it gives me a weird shudder. Food is food is food, eat more, eat less, eat differently, eat however you like, it's your decision (just don't eat animals please). I have made a decision to get more active, cook more and eat a little bit less (but still eating and enjoying delicious food) in order to take better care of myself. This isn't about size or shame, I am doing this as an affirmative thing for me. Anyway, rant over, back to food!

I made this muffin recipe pretty much as directed. I reduced the sugar from 3/4 to 1/2 cup and made my own apple compote. At the end I had to add some more milk as the batter was too thick and dry, I don't know if that was because I used homemade apple compote, if it has a different liquid content to the one the recipe author used. Anyway, these muffins are delicious and don't taste any different to my regular blueberry muffins, just a tad less sweet because I reduced the sugar. They worked out at 106 calories each, as calculated using the MyFitnessPals app for Android.


Yes, that is a half-eaten muffin on an Argos catalogue! It looks a little bit like a shocked °o° face!

  4. Mmm I love blueberry muffins. I totally made some applesauce yesterday (using the same recipe you did it seems!) because I had a load of spare cooking apples and a vague feeling that I could bake with applesauce, even though I've never done it before.

    My mum loves blueberry muffins and this could be a great recipe to try! I gotta say, yours look better than the photos on the source site :P
