Chickpea broccoli casserole from VWAW

I haven't made this classic in ages, possibly years! But wet, wintery weather and a carton of chickpeas on the fridge made me think of it. I reduced the recipe by about half, and didn't include the chives or olive oil. I also had some cannellini beans, so I threw them in too. Sprinkled with breadcrumbs on the top to complete the baked, casserole look.

As Isa says, it is bland but comforting. I love it with a dab of brown sauce. My portion was 1/6 of the casserole and was 119 hearty, delicious calories.



Every time I make anything from VWAV I always think of when I first bought it and How It All Vegan 6+ years ago and had no idea what most of the ingredients were or what the dishes were meant to look like (I have the UK editions which don't have any photos!). Oh how far I have come!
