I threw a couple of tablespoons of oats, a tbs of pea protein powder, a tbs of ground flaxseeds, about a tbs of walnuts, a tbs of peanut butter and about half of a 450g bag of dates into my mini food processor and ended up with a tasty, if slightly crumbly mixture. I didn't soak the dates but if I did it probably would have helped make them less crumbly. It was moist enough to press together into the bottom of a lunchbox and chilling it in the fridge makes it solid enough to slice into bars.
I love dates, they taste like caramel. And peanut butter only adds to the party :)
