Mixed-nut roast




Can you believe that I've been meat-free for over 8 years and have never made a nut loaf! That had to be remedied! I made this nut roast with mixed nuts instead of just cashews, used the mushroom variation and didn't bother with a gravy (who needs gravy when you have Chef brown sauce? I was brought a massive bottle over from Ireland! Along with a massive jar of Marmite, my salt-fiend dream!). The loaf was lovely, not exactly aesthetic but tender, herby and hearty and as a bonus it held its shape well. Potential Christmas dinner I'm thinking!
