Today I returned Vegan Pie in the Sky to the library and borrowed 'The Joy of Vegan Baking'. I adore Colleen Patrick-Goudreau and her podcast Vegetarian Food For Thought, and this book is a nice reflection of her style and ideals.
This book is a thorough introduction to the wonderful art form that is cruelty-free baking. The recipes are predominantly American although Colleen has included some international recipes such as German apple cake and strudel, British scones, Indian naan bread and spiced chai, Irish soda bread and the pleasant surprise of Japanese melonpan! Melonpan is a combini staple not widely known outside of Asia I didn't get to try it when I was in Japan as the combini version isn't vegan but am looking forward to giving it a whirl!
