Very Simple Blueberry Muffins

This Vegweb favourite is also my go-to blueberry muffin recipe, its a simple, uncomplicated recipe made of cheap kitchen staples. I've adapted it many times, using half wholemeal flour/half white flour, using brown sugar instead of caster, using whatever milk I have on hand but this is what I used today...


I've made the measurements metric, if you're imperially minded use the original recipe.

Makes 6 muffins

175g flour (I used white self-raising)
70g sugar (I used regular caster sugar) 
2 tablespoons baking powder 
1 teaspoon salt
175mls non-dairy milk (I used Kara coconut milk)
60mls vegetable oil (I used sunflower oil)
125g of frozen blueberries (about the size of a small punnet)

Preheat the oven to 200°C. Mix together the dry ingredients, then mix in the wet ingredients and finally fold in the blueberries. Thoroughly mix everything together until you get a thick batter, put into a muffin tin and bake for 25-30 minutes.
