Blueberry Bliss Cheesecake

From the recently-borrowed 'Vegan Pie in the Sky'. Obviously I was drawn to the blueberry cheesecake as soon as I flicked through the pictures.

The problem is... I have never made a cheesecake before. Vegan or otherwise. However, I had all the ingredients on hand (graham crackers = digestive biscuits) for the Blueberry Bliss Cheesecake and decided that there were worse ways to spend a Tuesday evening than try a complicated recipe for the first time.

Well, I say complicated, really its just blending up the long-ish list of ingredients, cooking it and waiting for it to cool. The process isn't complicated but the fact that I had absolutely no idea how to make a baked cheesecake did complicate things for me!

In the name of honesty (nobody gets anything perfect the first time!) I will list what I did wrong...

1. Forgot to grease the pan
2. Used a pan that is not a pie tin, so I'll never be able to get it out!
3. Halved the recipe but mysteriously ended up with much more filling than base (I seem to lack the measuring gene!) and also didn't know how long to cook it for. I halved the time but don't know if its right (!?)
4. Added a dash of liquid to the blended 'cheese' mixture to get it to blend easier so I have no idea if the texture is right

However, despite my mistakes it turned out quite nicely...

Slathered in Alpro vanilla dessert! 

The verdict? Great for a first try but I think next time I'd make less of the sauce (there was loads of it despite halving the original measurements) and put a bit more sugar in the 'cheese' mixture. The texture was sufficiently cheesecakey and I managed to get a slice out relatively whole! Success!
