Odlums wholemeal 9 grain bread mix and homemade cashew Nakd-style bars

I'm off work for a few days but have an exam to study for.. so it's time for some avoidance cooking! Avoidance cooking is a tasty method of procrastinating, I have to start studying but first I think I'll bake something!
Firstly I have to say, I love Nakd bars.
I don't understand why they won't spell correctly or why they use that little line over the 'a' which as far as I know is used mainly in Latin but that's another story!
I love that they're so ridiculously tasty yet really healthy too.
The 'cashew cookie' variety lists just cashews and dates as ingredients.
I figured with ingredients that simple I could just make them myself!
Following these instructions I managed to do so! I only made a small amount as they're just for me and I only have a little mini-chopper.
The first ones I made are just cashews and dates and the second ones are mixed nuts with hemp and chia seeds and a splash of vanilla.
They both look the same really!
My advice for making these is that they're really easy and tasty but do not soak the nuts (do soak the dates). Also, be prepared for the fact that they're a little bit oily. Just dab them with some kitchen roll and they're fine. If you soak the nuts it ends up as more like a biscuit dough. They're a little bit softer than Nakd bars, simply because the folks at Nakd can afford a dehydrater!

 
I also made a lovely loaf of brown bread... using a bread mix. It was the first time I've used a bread mix, usually I think what's the point when you can just throw some flour and water in a bowl for cheaper and get the same result.
However, this mix was vegan, on sale for 99c in the supermarket and it specifically doesn't involve kneading! I don't mind kneading, I'm just not very good at it and its very messy when you're as bad a baker as I am. I have yet to make a bread dough that's not horrendously sticky and needs to be saved by half a kilo of extra flour!
