Happy St Stephen's day everyone! I hope that santa was good to everyone!
I'm just relaxing after all the stress of Christmas day!
I had dinner with my extended family. Even though this was my second vegan Christmas it was my first not cooking at home, so I made some Black-Eyed Pea and Quinoa Croquettes from Vegan with a Vengeance to have instead of meat and I made sure that my potatoes were made with vegan butter, I use the Pure sunflower oil spread.
Despite my worries, dinner with my family was great, we even had Christmas cracker crowns! I had mashed potatoes, croquettes, cauliflower, sprouts, carrots and some of my aunty's amazing stuffing with she made vegan for me. I also brought some Baxters carrot and butterbean soup (I like Baxters, they label their soups as vegan, not just vegetarian) to have for a starter and I made some apple crumble and mince pies to have for dessert with some vanilla Alpro soya yogurt.
Actually they call it 'dessert', its more like a custard than a yogurt but lets not get into semantics, its gorgeous!
I had a really bad dose during the week and besides nearly coughing up my own lungs I completely lost my appetite. However, having to eat Christmas dinner brought it right back and now I'm back to enjoying food again! I was craving a toasted sandwich today so I fried some tofu in soya sauce, toasted sesame oil and vinegar and grilled it on a sandwich with humous, salsa and onions.. mmm..
