As anyone who reads my irregular ramblings will know, I have Monday's off college and therefore its my cooking day!
Since I had time to make breakfast properly, I stewed some apples with cinnamon and sweet freedom sweetener and had them with porridge, blueberries and hemp seeds. All accompanied by a kiwi, apple, orange juice and kale smoothie.
For lunch I made a roll with mashed avocado, hummus and baked tofu.
I made the tofu marinade (soya sauce, apple cider vinegar, tabasco and paprika) this morning so it'd have a couple of hours to soak about before I baked it, I rarely have the time to let tofu soak in the marinade as long as it should. It made for a pretty good sandwich!
Dinner was creamy peanut kale. I've been meaning to make this for ages, more out of curiosity than anything. I love kale and I love peanut butter but together?
As it turned out, most definitely yes!
I absolutely loved it, the sauce is creamy, spicy and slightly salty, perfect! I made it with kale, chopped peppers and crunchy peanut butter and had it with rice noodles. I also made sure to make enough for lunch tomorrow, the same with the tofu.
I only tried peanut butter for the first time after going vegan a year and a half ago and am a bit of a fan of peanut butter and jam sandwiches, but now I've found a new use for it!
Have to go now and put up my Christmas tree!
