'Alternative Vegan' and Squash-Tofu Pasta

Today I was cooking with leftovers for tomorrow's lunch in mind!
I cracked open 'Alternative Vegan', which despite having for a while I'd yet to make anything out of. I made fast cauliflower (p68) and plain houmous (p138) on a wholemeal baguette for my lunch, which was insanely good, so I made some to have leftover to bring to college tomorrow.

I also made pasta vaguely based on this. I didn't have pasta shells so I just made the tofu-squash-tomato sauce filling (I used acorn squash instead of butternut), put it over penne pasta in a pyrex dish, sprinkled it with some oats (I'm too lazy to make breadcrumbs, especially when I can just use porridge oats to the same effect) and baked it in the oven.

Enough for dinner and leftovers, sorted!
