Linda McCartney burger and M&S chilli olive salad


I don't blog about salads very often. I tend to leave colourful instagram-able salads that to the "clean-eating" brigade and focus on fun/cheap/convenient vegan products. But I do occasionally eat salad, especially if its warm outside and I have a good supply of balsamic vinegar. If I'm going to eat a salad for dinner, it is going to be a hearty one! This salad comprises of a Linda McCartney veggie burger, a packet of Marks and Spencer's chilli olives, grilled tomato, grilled mushroom and a salad mix which had greens and beetroot. I just put all that in a bowl, poured in some balsamic vinegar and ate outside in the (rare) evening sun.


I bought the chilli olives to have as a snack while out yesterday, but didn't get around to eating them, so in the salad they went. My love of green manzanilla olives comes from my time spent in Spain. These olives were marinated in chilli and black pepper, with a fairly mild and pleasant level of spice.


The Linda McCartney vegetarian burgers seem to be new, I hadn't seen them before anyway. They are beef-style and remind me of the Vegetarian's Choice burgers. The flavour is a bit plain on its own, but serves as a good vehicle for other flavours and sauces. I like them with houmous or salsa, but then I think everything benefits from houmous and/or salsa :)
