Avocado on toast with salsa and chickpea scramble


I know avocado on toast is seen as a bit of an Instagram foodie thing, but it is popular for a reason! It is really delicious! Also, I don't make chickpea scramble very often, but every time I do I love it. Also every time I do it, I forget to measure my ingredients for a recipe! I mixed chickpea flour, soya milk, olive oil and nutritional yeast together to make an egg-like batter. I pour some in the bottom of a bowl, microwave for a minute, mash it up with a little bit more soya milk and oil and microwave it for another minute. Then I put a bit of salt and pepper on it, and voilà! I don't know how much it tastes like scrambled eggs but I like it and it serves a similar function. It served as lunch accompanied by a cup of coffee and a Sunday newspaper.
