'Vegan With a Vengeance' Mocha Chip muffins

As I have mostly likely said before 'Vegan With a Vengeance' is my most used cookbook, it is a vegan classic.I love my other cookbooks, but nothing beats VWAV for basic, reliable recipes with an interesting twist.

I have made the mocha chip muffins (recipe available on the PPK) many times over the last few years with different variations. I have used margarine instead of oil, vinegar-curdled soya milk instead of yoghurt,  liquid sweetener instead of sugar, added cinnamon, made them with and without chocolate chips. They always turn out perfectly moist and chocolately!

Strangely enough today was the first time that I added the coffee powder as per the original recipe. The coffee taste doesn't really come through in the final product, if you want a coffee taste I would either add more coffee powder or get stronger coffee powder!
