Ramen Noodles in Soymilk Sesame Broth from Vegan Eats World
I know I haven't posted about it much but I love Vegan Eats World. There are so many unique, international recipes that I haven't seen in any other vegan cookbooks. I flick through it pretty frequently (normally when I'm eating my breakfast) for inspiration. Even if I don't make an exact recipe I get ideas for ingredients or spice combinations. The recipes have a lot of different ingredients which I don't always have on hand, but I tend to be a bit flexible with recipe ingredients and directions.
I didn't have all of the ingredients for this recipe (Ramen Noodles in Soymilk Sesame Broth p226) but I had the main flavour components- plain unsweetened soya milk, light miso, tahini, ginger, dried shitake mushrooms as well as some buckwheat noodles.This was my first time trying soya milk ramen, the both is savoury, creamy and, with the miso and tahini, a little bit cheesy. I may also have added some nutritional yeast for fun.
