Speculoos muffins

As I mentioned in my previous post, I have some Speculoos spread and I like to make Speculoos muffins by adapting the peanut butter cupcake recipe from 'Vegan Cupcakes Take Over the World'.

After a bit of Google searching I came across the recipe online here so that you can have a go at it even if you don't have the book. Apart from using Speculoos instead of peanut butter, I also reduce the sugar a little bit as speculoos is already sweetened. The blackstrap molasses can be left in or out, I have made it both ways and don't have any preference. The rest of the directions are the same.

As these photos attest to, they look rather non-descript but they have a gorgeous golden brown colour and taste amazing! All the delicious cinnamon-spiced taste of Speculoos with the rich mouth-feel of peanut butter. They'd be a great breakfast muffin if they ever lasted that long!
