Salad with green olives, houmous and golden crispy tofu

For the tofu I used this recipe from the Vegan Dad blog as I have never been able to master the art of breading. I followed the instructions almost exactly (I used coconut milk instead of soya and al i oli sauce instead of mustard), using panko breadcrumbs and they turned out really well!
