Desk snacks for a busy vegan!

I haven't been blogging much recently simply because I am so busy!
I have a full-time office job, so I haven't been cooking as much as I would like.

I bring lunches to work but to be honest, I am starting to perfect the art of the desk snack. 
Desk snacks are snacks I can eat while working without getting too much mess on my keyboard!

My desk snacks include:

- Nut, seeds and dried fruit
- Peanut butter and jam sandwiches
- Bananas
- Biscuits
- Sandwiches with various fillings such as houmous, salsa, avocado, salad greens, tofu or seitan slices
- Breadsticks

Despite my attempts to make enough leftovers, I tend not to eat heavy meals in the evening when I get in from work. So the lunches I bring to work are mainly made the in the morning with quick-cooking ingredients and stuff from the fridge. 

My quick lunches include variation on:

- Couscous with salad, olives, sundried tomatoes and smoked tofu
- Noodles with greens, beans/tofu/seitan, sriracha
