Toffee-Apple Muffins

Apparently its national muffin week, which is as good an excuse as any to get out the muffin tin! My pre-vegan favourite was the Cuisine de France toffee-apple muffin, the vegan re-creation of which has been an on-going project.
I searched on Google for 'toffee-apple muffin recipe' and came across this recipe on the BBC website. I replaced the eggs with Orgran egg replacement powder and used home-made toffee, the recipe I found on the 'Vegan family' website (towards the bottom of this page).

They're still not perfect, but pretty close!
I added blueberries to part of the batch on my dad's request.
