I hope everyone is having a happy animal-friendly Christmas!
My festivities have been pretty low-key, I'm just happy to be home with my family after all the flight disruptions and cancellations. Every year people wish for snow at Christmas, oblivious to the hassle and chaos it brings! Dinner was lots of delicious roast vegetables (which I miss living in a flat with no oven!), with my mam's veganised apple and blackberry crumble. My contribution was some easy chocolate cake from the book 'Now Vegan'. It started out as a cake but I may have put too many chocolate chips into the sponge so it was salvaged as brownies. As it was late in the evening on Christmas Eve only one local shop was open and the only vegan chocolate I could get for an icing was Fry's chocolate cream, which made an unintentional thick, creamy mint chocolate icing. Muy yum!
I'm back in Ireland until after the new year so I'm looking forward to a nice relaxing break with family and friends and lots of baking!
