Sweet cinnamon berry buns


I made these iced buns using a recipe from Maple Spice, purely because I had never made iced buns before and I like working with yeast. I love kneading dough and waiting for it to rise, it makes me feel like a real baker! Plus for this recipe I got to use my sugar thermometer, so I was well pleased with myself!

I followed the recipe, except instead of using almond extract I used almond milk. I made dainty little indentations for the jam, but once they hit the oven they rose much more than expected and expelled most of the jam. Luckily icing covers a multitude of sins! 


I had never tried iced yeasted buns before, apart from cinnamon rolls, so I wasn't really sure what to expect from these. They were nice, sweet and bready, with the cinnamon and vanilla subtly coming through. While I liked them and enjoyed making them, they honestly wouldn't be my favourite, but I'm glad I experimented and made something different.
