Tofu and polony scramble with baked beans and avocado on toast


Delicious but simple cooked Sunday breakfast. There are loads of different recipes around for tofu scramble, I think it is one of those dishes that every vegan puts their own twist on. I just keep it simple; tofu, onion, soya sauce and turmeric. I added some chopped Fry's Polony as I had some left to be used up. 

I really like Fry's polony for sandwiches, but I feel like its almost like a secret product that you have to get to vegan level 7 to know about.... its not particularly well marketed and its always hidden in the bottom of heath food shops freezers in a package with no pictures. I never had polony or bologna sausage pre-vegan, but Fry's polony is slightly smoky and ham-like. It last for ages too, I have gotten nearly three weeks worth of sandwiches out of the one package!

  1. I have not seen Fry's polony either ... do they carry it at H&B? If not I will mention it to the manager at the one where I shop as she has brought in several things at my suggestion ...

  2. Hi Anne! Thanks for the comment! I got it in the one H&B in Dublin that has a freezer, so I'd say that any H&B that gets in Fry's stuff could get it in for you. It is a slicing sausage which comes in a tube, wrapped in plastic with lots of writing in it, hence why it is a bit anonymous!

  3. I always worry that once the polony is defrosted I'll never get through the whole thing, so rarely every buy one!
