Chocolate silken tofu mousse


Silken tofu mousse is an old vegan classic. It may seem a bit odd to some to put tofu in dessert but it really does make an easy, rich, decadent mousse. I usually make chocolate mousse but you can make it any flavour you want. Also if, unlike me, you have any nice liqueurs this would be a great recipe to use them in, like this Tia Maria mousse that was featured on Come Dine With Me.

My recipe:
A packet of silken tofu (I used Mori-Nu firm silken tofu)
125g bar of plain chocolate (melted)
100ml of soya milk (I used unsweetened, but it is great with vanilla soya milk or almond milk)
1 tablespoon sugar
1 tablespoon cocoa powder
1 teaspoon vanilla extract
1 teaspoon cinnamon

I blend all of these ingredients in a jug with my hand blender and let it chill in the fridge for about half an hour.  Serve in a cup, put on a biscuit or just eat with a spoon!
