Massaged kale salad

PhotobucketThe PPK can do no wrong in my eyes, it is a source of vegan creative culinary brilliance. If it suggests something, its quite likely that I'll try it. So when I bought a big bag of kale today I thought rather than throw it in the freezer as per usual, I'd attempt a massaged kale salad. I softened the kale up by rubbing it with lemon juice, salt and a bit of oil for about 2 or 3 minutes. I added carrot, avocado, cucumber, falafel, roasted mushroom, roasted beetroot (and a little dollop of houmous) to make it a massive, filling fridge salad.
