Chickpea scramble

I'm a fan of scrambled tofu, what vegan isn't really? 
However, chickpea flour better mimics the texture of beaten eggs and therefore makes also makes a good scramble. What's better is that chickpea scramble can be made in the microwave, just like scrambled eggs, making it much more convenient than draining, chopping and frying tofu. 
It's ridiculously easy, just mix together chickpea flour, with some liquid and fat (and maybe a bit of stock powder for extra flavour) until it makes a batter-looking mixture. I have used coconut milk, and a mixture of water and sunflower oil, but I'm sure you could also use spread or plant milk, anything to give it that little bit of fat. 
Once you have a batter-consistency, just pop it in the microwave for a minute and when it's done mix/mash it with a fork. It should be slightly soft, so I usually add a tiny bit of liquid to it as I'm mashing it. Add some salt and pepper, or whatever you fancy and there you have some quick and easy scramble!
    


I made a fridge-meal out of it and added some onion, sliced carrot and avocado to it, but I'm sure it's great with baked beans on toast.

  3. Forgive me but I've never seen chickpea flour! Can this recipe work using blended chickpeas??

    To be honest I don't really know. I've never tried it with blended chickpeas but don't let that stop you from experimenting! Let me know how it goes! You can get chickpea flour/gram flour in Indian markets, places that sell international food or in health-food shops.
