This is the coconut curry vegetable bake (p124) from 'Garden Of Vegan'.
It's hardly the most aesthetic dish but it is just so damned delicious.
The sauce reminds of of dirty chipper curry sauce, in a good way!
Like the type of sauce they put in 3-in-1s but much better!
This odd vegetable came into my life yesterday, it was on special offer in the supermarket for €1. I didn't know what it was but hey, the combination of a challenge and a bargain always gets me! For those of you, like me, who've never come across it in the course of their day-to-day lives, its kohlrabi.
I trepidly chopped it and boiled it until tender along with some carrots. Paired with some curry bake and steamed kale it made for good, solid, tasty dinner. Kohlrabi , I discovered, tastes a bit like cabbage.
Not bad, but not amazingly, wonderfully, magnificently mindblowing either.

This meek-looking muffin is a full meal muffin. I make these alot, they're that perfect combination of sweet but not over-indulgent. I make them and then keep them in the freezer to have for quick breakfasts, to put in my lunchbox for college or just to have as a snack. They're really healthy, really tasty and pretty much the only way you could get me to voluntarily eat bananas! The black-strap molasses gives them a real richness, it reminds me a little of gingerbread.
Finally, having gotten my hands on a copy of 'Lick It!' recently I've finally gotten around to making some ice-cream. I don't have an ice cream maker, because really, what student does, so its currently freezing its little bum off in the freezer. I tasted a little bit of it before it went in the freezer and it was good! Its a blueberry ice cream, made with coconut and rice milk, so its soy-free too. I'm aware that I've used alot of coconut milk today, regular readers (I'm not really arrogant enough to think I have any!) may be aware of my distain for anything coconut flavoured. I love the richness, the thickness, the creaminess that coconut milk lends to recipes, but not the taste so I'm reeeeeally hoping that the ice cream isn't overwhelmingly coconutty.

Black-strap molasses also worked its sneaky, buttery charm on these chocolate chip cookies I made last week. They recipe is from 'Vegan With a Vengeance' (p189) and they really were the best cookies I have ever made!
The mixture was quite crumbly and I was expecting them to fall apart on me but they turned out perfectly!
