April and May Food Photo Roundup


☆ Cornucopia - If I am staying out after work I like to drop into Cornucopia for dinner, a muffin and some coffee. I find the salads are much better value than the main meals, plus I adore their vegan mayonnaise. Three salads were under €6 and were very filling. My favourites, coleslaw and garlic potatoes, along with vegan Cesar salad. The muffin was raspberry and coconut and the coffee was a soya latte. Cornucopia's vegan baked goods have improved alot recently, I can remember a time when there was much fewer vegan options, now most of their bakes and cakes are vegan. I like the early evening café vibe, I like to get a window seat and people watch, or read a book.


☆ Clearspring sushi rice seasoning - I am obsessed with this at the moment, it is so tangy and delicious. It has no sugar so it isn't really sweet like some other sushi seasonings. I have used it for sushi rice, but also on salads and as part of a tofu marinade with sriracha sauce.


☆ Aldi coconut ice cream - I love Aldi and I love that they are getting in more and more vegan products. They have also gotten in a bunch of nut bars and protein bars, similar to Nakd and Trek bars.


☆ Tesco English muffins - I found dairy-free English muffins in Tesco and have been a bit obsessed with them. They are soft but sturdy enough to hold alot of sandwich fillings. They also toast beautifully, lovely with some avocado and nooch.


☆ Baxters Red Slaw - I am very into pickles at the moment, really craving tangy vinegariness. I had never tried slaw outside of coleslaw, but this stuff is amazing, it is so tangy and crunchy. I love it with veganaise on a sandwich.


☆ Breakfast of baked beans, hash browns, avocado and Linda McCartney Sausages


☆ Homemade hot cross buns at Easter. They were described as being delicious but more like a scone than a bun, so next time I will knead them more.
