Wholewheat pasta / Vegusto golden cheese / kale / green olives / onion / butterbeans / chestnut mushrooms
I have been super busy recently (haven't we all), but wanted to share this delicious weeknight fancy cheesy pasta. Just fried all the veg together and threw in the beans, olives and cheese in with the cooked pasta.
I was in Brighton for VegFest last week and brought home some fancy vegan cheese (Mozzrisella amd Vegusto) and chocolate (Ananda's marshmallow Round Ups and Montezumas). Amongst other foodie fun, I also had the joyous experience of eating Boho Gelato's vegan salteď caramel peanut butter ice cream on the pier in Brighton's spring sunshine.
