Lemon drizzle cake made from the Tesco brand lemon drizzle cake mix, which is accidentally vegan. Instead of eggs, milk and butter I added two teaspoons of flaxseed soaked in two tablespoons of water, 120ml of soya milk, 80mls of sunflower oil and a teaspoon of white vinegar to the cake mixture and baked as directed. Also, I made the buttercream with Pure sunflower oil spread and a dash of soya milk. The cake turned out perfectly! I love citrus flavours and the glaze was a lovely finishing touch.
oh, I too like lemon CAKE ... not near a Tesco but I have a vegan Starbucks lemon CAKE recipe somewhere ...
