I love tofu and I love tofu scrambles, but once I buy tofu I sometimes find it hard to use it up before it goes off in the fridge. The perils of cooking for one. My solution to these kinds of problems is buy and freeze. I do this with tempeh, home-cooked beans, fruit, vegan cheese. However, whenever I see a recipe that uses frozen tofu it seems like more hassle, thawing it, marinating it, dealing with a different texture. So I decided to see what would happen if I just cooked it from frozen. Out of the freezer, onto the frying pan. I made a scramble by frying the frozen tofu and adding soya sauce, tumeric and smoked paprika. Basic, but it does the job. It worked. I found that the texture of the cooked-from-frozen tofu wasn't that different to fresh tofu, but that the beany taste was much stronger. So I would suggest using more seasoning than with fresh tofu. Now that I know that tofu can be successfully cooked from frozen, I see more of it in my immediate future.
Gorgeous, love scrambled tofu. I sometimes add black salt. Got some for 50c a bag in the Eurasian market and when you add it to tofu scramble it tastes exactly like scrambled egg :)
