I haven't been cooking much recently.
I think that cooking is an essential life skill, everybody should have some basic recipes, but I also think being able to throw together vegan meals and snacks from cheap/convenient ingredients is handy for the times in life where elaborate meal prep isn't a priority. It's okay for food not to be your central focus at all times.
I love baked beans on toast. I throw jarred olives into couscous. I put leftovers into wraps with houmous. I bulk up soya yoghurt with seeds and frozen berries. I eat alot of packaged vegetable soup. I am not afraid of instant ramen noodles. I grab carrot sticks and crackers.
Sometimes I like to cook and sometimes I wish that there was a (vegan) human equivalent of dog food, just all necessary nutrients in one easy, instant food.
