A home-made spelt flour base with Zest pesto, tomato sauce, vegan cheese, olives, mushrooms and Fry's polony.
I don't think that there is anything special about spelt, I just wanted to see if I could make a good yeast-risen pizza base out of it for something different. I used this dough recipe and it turned out really well, lovely and light for wholemeal flour. I love thick, soft, foccocia-like pizza crusts and this was perfect.
