Soria natural brand vegan Spanish omelette. Available in El Corte Inglés and vegan shops here in Barcelona for €1.84. The packaging suggests heating the omelette but I like to eat it cold straight from the packaging, either on its own or on a roll (always with houmous!) to make a "bocadillo de tortilla".

I followed your link to the tortilla company and saw this: Quefu, the 100% vegetable "cheese". Have you tried it?
