Speculoos ice cream

I have an ice cream maker and a glut of Specluoos spread, so when I saw this very straightforward recipe for Biscoff ice cream on the Vegan in the Freezer blog it was serendipitous! Biscoff is the American brand name for Speculoos, so it's the same stuff. This recipe only has three ingredients, and doesn't involve heating up any ingredients, which means no waiting for ingredients to chill. The longest step was freezing the ice cream maker bowl. 

Once churned it is cinnamonly and delicious, but not overly sweet. However, some of the coconut milk taste does come through. I thought it complemented the Speculoos but if you don't want the coconut flavour I would recommend using another non-dairy milk/cream as the base for this ice cream.
