Stretching my culinary horizons, I made enchiladas for the first time today.
They're great in a greasy, junky kind of way, like spicy pizza!
Sauté some vegetables, put them in whatever amount of tortillas you need, roll the tortillas up in some sort of oven dish (I used a loaf-tin!), cover them in jarred fajita sauce and Cheezly sauce (flour, coconut milk, nutritional yeast, soya-free cheddar Cheezly) and bake in the oven for 25-30 minutes at 200
°C.
