Chickpea Quiche

 
I love chickpea flour omelettes and I think I've finally perfected the chickpea flour quiche! Same principle really, except this goes in the oven.
I added fried shallot, mushroom & tomato to the usual chickpea omelette batter (milk, oil, chickpea flour & black salt, mixed until it its runny like a pancake mixture) and poured it into a flan tin lined with some defrosted Jus-rol shortcrust pastry (what, this isn't Come Dine With Me!) spread with some well nice Zest vegan pesto. In the oven at 180c for 30 minutes, its perfect! I'll be having the leftover (ie most of it) for lunch tomorrow.
