A Green Smoothie and Some Lunch

This morning I decided that a green smoothie was in order.
Even though I use kale in smoothies all the time I've never managed to get it to turn out that beautiful green colour before, most likely because I usually go a bit mad with the blueberries!
Today was just half an apple, half a pear, a big handful of frozen kale, some frozen plum, hemp seeds and a dash of agave syrup. Monday is my weekly foray into cooking, today I made chilli with yellow rice (I love turmeric, but it stains everything!), noodles with veg and fried tofu and a loaf I put together with the aid of the Magical Loaf Studio on the Vegan Lunchbox blog.

Recipe for my loaf:
1/2 cup of Cashews
2tb olive oil
One onion (I used two shallots)
One garlic clove (I used powder)
2 cups of mixed beans
1 cup of uncooked oats
1/4-1/2 cup of stock (I only needed a tiny bit of it)
2 replaced eggs
1 tsp dried basil
1 tsp of parsley
1 tsp cumin
Dash of pepper
A few splashes of worchestire sauce
2 tb soya sauce

I mixed it all together, put it in a loaf tin, baked for an hour at 180 degrees and the result was a really tasty loaf (especially with ketchup)! Everything was split between containers for either the fridge of the freezer.


As an aside, I'm aware that the measurements for the recipe are in American cups, alot of the recipes I use are American and although as an Irish person who has grown up with the metric system I'm a little confused by and distainful of the cup system, I have a measuring cup at home that converts to American cups, so it just makes my life easier. I still can't get used to measuring temperature in Fahrenheit though, all my temperatures are in Celsius, which begs the question why doesn't anyone use kelvin?
