I bought some canned pumpkin with the intention of making a pumpkin pie for a Thanksgiving themed dinner that ended up being postponed, so I thought I would experiment with it anyway. Pumpkin in a dessert is a very American thing that generally isn't embraced here, but I thought if we can accept carrot cake we can at least give pumpkin a go! I had the idea to make the pumpkin muffins from "Vegan With a Vengeance" as muffins are handy lunchtime snacks, and in VWAV I trust!
I followed the recipe pretty closely, except that I used light brown sugar, self-raising flour and left out the ginger and cloves as I didn't have any. I have to admit that the brown-orange colour of the batter wasn't exactly appealing, but once they were baked the cinnamon, the caramel flavour of the brown sugar and molasses and the orange sweetness reminded me of softer carrot cake. So, I declare it a success! I still have one can left, so that pumpkin pie may happen at some point in the near future.
ah ... I have a couple of those tins of pumpkin in the cupboard & muffins! the days are drawing in, it is getting chilly ... what could be better?
